my favorite oil-free, raw vegan tomato sauce [hclf + fully raw]

i spent forever looking around for a quick and easy vegan meal to make for when i’m running out of time or simply in need of food right¬†now! yesterday, i came across a recipe for a raw vegan sauce and parmesan that i just had to try. with a few tweaks, i’ve perfected the recipe. so, i present to you: the best ten-minute¬†raw vegan sauce you’ll ever eat!

ingredients

sauce:

  • 6 sundried tomatoes
  • 2 tbsp tomato paste
  • 1 can of diced tomatoes
  • 2 tsp dried oregano
  • 1 clove of garlic
  • 1/4 cup fresh basil
  • 2 tbsp water

vegan parmesan:

  • 1 cup cashews
  • 1/2 cup nutritional yeast
  • 1/3 tsp garlic powder
  • 1/2 tsp salt

directions

  1. for the sauce, add every ingredient into a food processor or blender (your choice). blend until smooth. if you want a more watery sauce, try adding more water or diced tomatoes. if you want more of a pasty sauce, add more tomato paste.
  2. for the parmesan, add every ingredient into a food processor and pulse until it takes on a fine texture. store in the fridge. enjoy!

this sauce is delicious! i hope you like it as much as i do. note that i did not choose to make the vegan parmesan this time, but it has great reviews, so i’m sure it’ll be good.
